Chicken Fajitas

(Serves 4)
Ingredients:
500g or 4 Chicken breast, skinned
1 Onion
1 Red pepper
1 Green pepper
2 tbsp oil, olive or vegetable
15 - 20g uweigh Fajita Spice
8 flour tortillas
Salsa & Sour Cream to serve
Method:

Cut the chicken, onion and peppers into strips.

Heat the oil in a large frying pan, add the chicken and stir fry for 2 minutes.

Add the onion, peppers and fajita spice. Cook for 5 minutes or until the chicken is cooked through.

Warm the tortillas as directed on the pack.

Divide the filling between the tortillas, add salsa and sour cream, roll up and serve.
Alternatively:
Mix together the spice and oil, using as a marinade for the chicken, onion and peppers. This can be done 30 minutes in advance or overnight. Then continue to fry as above.
