Spiced Basmati Rice
(Serves 2 to 4)
Ingredients:
200g uweigh Basmati Rice
3 tbsp Oil, sunflower or olive
1 Onion, finely chopped
1 tsp uweigh Chilli flakes (or more if you like the heat)!
2 Cloves of garlic
½ tsp uweigh Garam masala
½ tsp uweigh Turmeric
1 tsp uweigh Salt
500ml uweigh Chicken or vegetable stock
Method:

Washing Rice; Wash in several changes of tap water and then pour water over rice and soak for half an hour. Drain in a sieve. This will remove the excess starch and help achieve fluffy rice.

Pour the oil to a large saucepan and heat gently. Add the onion and fry until soft and lightly brown.

Add the rice, garlic, spices and seasoning. Stir for 2 to 3 minutes so all grains are coated with the oil and spices.

Pour in the stock and bring to boil.

Turn to a low heat, cover and don’t stir any more. Cook for 8 minutes or until rice is tender and all water has been absorbed.
Alternatively:
The spices used can be varied, you could use Cardamom, Cinnamon Sticks, Cloves, Nigella seed etc. You could also use vegetables such as peas, diced carrot and mushrooms.
