Chicken Piri Piri

A traditional Hot and Spicy Portuguese Dish
(Serves 4)

Ingredients:

For the Marinade:


150ml (1/4 pint) olive oil
2 tbs lemon juice
4 tsp uweigh Piri Piri Spice Mix

8 chicken portions, skinned

Method:

  1. Place the ingredients in a bowl and mix together to make the marinade.

  2. Score the chicken using a sharp knife, cover the chicken in the marinade and refrigerate for 2 hours or overnight.

  3. Place the marinated chicken pieces under a pre-heated grill or barbecue for 25-30 minutes or until cooked through, turning occasionally and basting with any remaining marinade.

Serve hot with a mixed salad or fresh vegetables.​
