Add 500g/1lb 2oz carrot cake mix, 215ml / 7fl.oz of water, 24ml / 1fl.oz of vegetable oil to a bowl fitted with a beater. Mix for 1 minute on slow speed. Scrape down and mix for a further 3 minuets on medium speed. Add 75g / 3oz of freshly grated carrot and continue to mix, on slow for 30 seconds. Bake at 180ºC, 360ºF, Gas 4, for approximately 40 - 50 Minutes. Cupcakes 20 - 30 minutes.
