Add 1kg of brownie mix to a bowl fitted with a beater. On slow speed add 250ml/8fl oz water and mix for 1 minute. Scrape down the sides continue to mix for a further 1 minutes. (Add nuts or choc chips optional) and mix for 1 more minute. This produces a stiff grainy mixture. Spread the mixture into a greased tin lined with baking parchment. Use an 18cm x 30cm tin for 1kg of mix. Bake at 180ºc, 350ºF, Gas 4 for approximately 25 - 30 minutes. Leave to cool and cut into square fingers. Baked Brownies should be crusty on the top with chewy, sticky middle.
