Add 500g/1lb 2oz lemon cake mix to a bowl fitted with a beater. On slow speed add 180ml/6fl oz water and 120ml/4 fl oz of vegetable oil and mix for 1 minute. Scrape down and mix for 2 minutes on medium speed then reduce speed to slow and continue for 1 minute. Pour the mixture into a loaf tin or 6” cake tin. Bake at 180ºC, 360ºF, Gas 4, for approximately 40 - 50 minutes. For Muffins, pour approx 75g into paper cases, bake as above for 20 - 30 minutes. Decorate as desired.
