500g/1lb 2oz madeira cake mix and 200ml/7fl.oz water. Place mixture into a bowl fitted with a beater. Add half the water (100ml) over 1 minute on slow speed. Mix for 3 minutes on medium speed. Add the remaining water (100ml) and mix on slow for 1 minute. Scrape down and mix for a further 3 minutes on medium. Pour mixture into a 6” round cake tin. Bake at 180ºC, 360ºF, Gas 4, for approx 40 - 45 minutes.
