Add 400g/14oz plain sponge mix to a bowl fitted with a whisk. On slow speed add 200ml/7fl oz water and mix for 1 minute. Scrape down and mix for 12 minutes on fast speed. Pour the mixture into two 7”/18cm sandwich tins. Bake at 190ºC, 380ºF, for approximately 25 - 30 minutes.
