POLENTA (Yellow Cornmeal)
(Allow 60g polenta per person & 250ml of water)
Bring salted water to a boil in a large saucepan. Gradually whisk in the polenta. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, it takes about 15 minutes.
Turn off the heat. Add a little butter and stir until melted. Serve it softly set, straight from the pan or you can also leave it to cool on a tray before cutting into fingers and deep or shallow frying.
