Add 1200g/2lb 9oz rich fruit cake mix to a bowl fitted with a beater. On slow speed add 120ml/4fl oz water and 3 medium eggs, mix for 1 minute. Scrape down and mix for 2 minutes on slow or until everything is evenly mixed. Pour the mixture into a 8”/20cm cake tin. Bake in a preheated oven, 175ºC, 340ºF, Gas 3, for approximately 1 hour 20 minutes.
