Add 500g/1lb 2oz scone mix to a bowl fitted with a beater. Gently add 225ml/8 fl.oz. of water on slow speed for approximately 1-2 minutes. If adding fruit add at the end of mixing. Place onto a floured surface cover and rest for 10 minutes. Roll out to 1.5cm/½” thick, cut into desired shape and place onto a greased lined baking tray, egg wash and rest at room temperature for 20 minutes. Bake at 230ºC, 450ºF, Gas mark 8 for 10 minutes.
